Recipe: Winter Melon Soup


  • I piece (.85 lb) split chicken breast (Whole Foods)
  • Several pieces sliced ginger
  • Water
  • 1 tsp salt
  • Dried shrimp (about 1.5 tbl)
  • 1/2 tsp mushroom powder
  • 1 (2-lb) wedge winter melon

MAKE Chicken broth

  1. Soak shrimp in warm water (about 1.5 hrs), while broth is cooking
  2. Put chicken in 5-quart dutch oven
  3. Add about 2 quarts of water
  4. Add sliced ginger
  5. Add salt
  6. Boil chicken briskly a few minutes, skimming off fat
  7. Turn off burner, and cover for 30 minutes, then skim off more fat
  8. Remove chicken from broth, shred chicken


  1. Remove seeds from winter melon
  2. Cut into 1/3 inch cubes, removing rind (about 5 cups)
  3. Add winter melon to broth
  4. Gently simmer, uncovered, until melon is transluscent (20-30 minutes)
  5. Stir in shredded chicken
  6. Salt to taste
